Ahhh spring, the time for sippin on gin and juice, sweet sunshine and good vibes.
But thanks to the folks at Catalina in beautiful Rose Bay, we’ll be adding a new fresh and fruity cocktail into our sundowner list. The ‘Catalina Dreams’ – aka the booze of our dreams – features Belvedere Grapefruit Vodka shaken with Cointreau and agave and if you want to be extra fancyy, topped with pineapple foam.
Brunch cocktail anyone?
40 ml grapefruit Belverdere vodka
10 ml Cointreau
10 ml agave syrup
20ml lime juice
Add all ingredients into a cocktail shaker with ice.
Shake vigorously to chill
Strain into a glass filled with ice
Fill the remaining gap in your glass with pineapple foam and garnish.
Pineappple Foam to Garnish
400ml pineapple juice (finely strained)
100ml sugar syrup
50ml Monin pineapple syrup
200ml hot water (with 2 dissolved gelatin strips)
Soak gelatin stips in cold water to soften them, once softened, add to boiling water and dissolve
Finely strain pineapple juice into an ISI cream whip
Add the syrups
Add water to ISI whip and seal tightly
Charge the ISI whip and set in fridge for one hour
Once ready, shake before use
